Vegetable Broth : 4 Servings

Ingredients

  • 1 stalk lemon grass, thinly sliced

  • 2.5cm/1 in piece fresh ginger, sliced

  • 2 garlic cloves, sliced

  • 4 tbsp soy sauce

  • 2 tbsp sake or dry sherry

  • finely grated zest and juice of 1 lime

  • 1 tsp caster sugar

  • 2 tbsp vegetable oil

  • 2 carrots, cut into matchsticks

  • 100g/4 oz baby corn, halved

  • 1 large red chilli, sliced

  • 100g/4 oz oyster mushrooms, sliced

  • 50g/2 oz baby spinach leaves

  • 85g/3 oz beansprouts

Preparation Method

1. Place the lemon grass, ginger and garlic in a large pan with the soy sauce, sake or sherry, lime zest and juice and caster sugar.  Add 850ml water and bring to the boil.  Cover and simmer for 10 minutes.  Strain and keep the broth warm.

2. Heat the oil in a large frying pan or wok, add the carrots, corn and chilli and stir-fry for 2 minutes,  Add the mushrooms, spinach and beansprouts and remove from the heat.

3. Divide the vegetables between four serving bowls, pour over the hot broth and serve immediately.
