Crispy Ham And Bean : 6 Servings

Ingredients

  • 450g/1 lb green beans, trimmed

  • 1 tbsp olive oil

  • 85g/3 oz Parma ham or prosciutto, torn into strips

  • 1 bunch spring onions, sliced diagonally

  • 1 tbsp balsamic vinegar

Preparation Method

1. Bring a pan of water to the boil, add salt and blanch the beans for 3-4 minutes.

2. Meanwhile, heat the oil in a large frying pan or wok and fry the ham until crispy.  Add the spring onions and the vinegar and stir for 1 minute.

3. Drain the beans and tip them into the pan.  Toss to coat the beans in oil.  Season to taste and serve immediately.
