Fluffy Pudding
This recipe is almost calorie free so perfect for those on not only a low carbohydrate diet but on any other type of diet. It is a great way to kill those late night cravings without adding inches to your waistline.
1 tbsp plain gelatin powder with ¼ cup cold water
1 cup boiling water
½ cup splenda
¼ lemon, lime or orange juice
3 egg whites
Begin by mixing the gelatin with cold water. After that is mixed, add the boiling water and stir until fully dissolved.
Next add sweetener and juice to mixture and stir. Let sit in the refrigerator, stirring every 10-15 minutes until it has thickened.
Afterwards, beat with a mixer on high until it is fully frothy or about 1-2 minutes.
