Peanut Butter Cookies
For those of you who have a craving for peanut butter that just won't seem to go away, this is the perfect recipe to satisfy your tastebuds. It's also high in protein, which makes it a good choice for a midday snack as well.
1 cup peanut butter
2 eggs
½ cup unsalted peanuts, crushed
5 scoops chocolate protein powder
¾ cup Splenda
3 tbsp olive oil
Preheat oven to 350 degrees F.
In a bowl, mix together peanut butter, eggs, and crushed peanuts. Slowly add in the protein powder, one scoop at a time until well mixed. Add the olive oil in while mixing in protein powder to prevent dryness.
Form into small balls and put on a backing sheet lined with wax paper. Flatten with a fork and then place in oven for 20 minutes. Cookies should feel slightly firm when finished.
Makes 6 servings.
