Sausage and Peppers : 8 Servings

Ingredients

  • 3 pounds Italian sweet sausage

  • 2 pounds green peppers

  • 5 tbsp olive oil

  • 1/2 cup sliced onion

  • 4 cloves garlic, minced

Preparation Method

1. Saute sausages in skillet until well browned on all sides.  Wash green peppers, remove seeds, and cut into quarters.

2. Heat olive oil in heavy frying pan.  Add peppers and onion.  Cook over low heat for 10 minutes.  Stir often.  Add garlic.  Cook for 4 more minutes.

3. Remove sausages from skillet.  Drain well.  Cut into 1-inch slices.  Add to green peppers and onion.  Stir well.  Cook for 10 more minutes
