Roast Lamb Leg : 4 Servings

Ingredients

  • 4 - 5 pounds lamb leg

  • 1 large clove garlic, minced

  • 4 tbsp prepared mustard

  • salt and pepper to taste

Preparation Method

1. Preheat oven to 450oF.  Wipe meat with damp cloth. (Lamb usually has a thick coating on the fat side.  Ask your butcher to remove it or you could remove it yourself with a sharp knife.) 

2. Cut small gashes in meat and insert minced garlic.  Cover with mustard.  Sprinkle with salt and pepper.

3. Place meat fat side up in shallow roasting pan.  Adjust heat to 325oF.  Roast meat 30 minutes per pound (20 minutes per pound if you prefer it rare).

4. Before serving, slice lamb and spoon pan juices over it.
