Meatballs in Tomato Sauce : 6 Servings
Ingredients
4 tbsp dice onion
3 tbsp diced green pepper
3 cloves garlic, diced fine
4 tbsp olive oil
1 pound sausage meat (preferably Italian sweet or hot)
2 pounds chopped beef
2 eggs, lightly beaten
1 tsp thyme
1 tsp parsley
3 tbsp grated Parmesan cheese
1 cup bouillon
1 cup tomato sauce
Preparation Method
1. In saucepan saute 3 tbsp onion, green pepper, and 2 cloves garlic in olive oil until light brown. Reserve drippings in pan.
2. Remove sausage from casings and place in bowl with chopped beef. Add sauteed vegetables, eggs, thyme, parsley, and Parmesan cheese. Mix well. Roll into 2-inch balls.
3. Add meatballs to drippings in saucepan. Saute until brown on all sides. (Add more oil if they stick.) Remove from pan.
4. Saute 1 tbsp onion and 1 clove garlic in saucepan until light brown. Add bouillon and tomato sauce. Simmer for 12 minutes.
5. Place meatballs back in pan, stirring carefully. Do not break up meat balls. Simmer for 5 more minutes
