Lemon Chicken : 3 - 4 Servings
Ingredients
4 large chicken breasts, boneless and skinned
2 tbsp lemon juice
2 tsp olive oil
2 cloves garlic, minced
1/4 tsp dried basil
1/4 cayenne pepper, or to taste
1/4 tsp teriyaki sauce (or low-salt substitute)
Preparation Method
1. Rinse the breasts thoroughly and arrange them in a single layer in a shallow baking dish. In a small bowl, combine the lemon juice, olive oil, garlic, basil, cayenne, and teriyaki sauce and mix well.
2. Pour the mixture over the chicken and turn to cover both sides of the chicken. Cover and refrigerate overnight for best results.
3. Cook the chicken over hot coals on a greased grill or broil in a conventional oven until thoroughly cooked, approximately 6 minutes per side.
