Grill Cod : 2 Servings
Ingredients
4 tbsp natural low fat yogurt
2 tbsp sun-dried tomato pesto
2 tbsp chopped fresh parsley or dill
2 cod or haddock fillets, about 175g/6 oz each, skinned
salad and crusty bread, to serve
Preparation Method
1. Preheat the grill. Mix the yogurt, pesto and one tbsp of the parsley or dill. Season and pour over the fish fillets in a shallow ovenproof or microwaveable dish, covering them completely.
2. Grill for 4 -5 minutes without turning until the fish fillets are cooked through to the middle. Or cover the dish with sling film and microwave on High for 3 minutes.
3. Sprinkle the remaining parsley or dill over the dish and serve with salad and crusty bread.
