Blueberry Ice Cream : 9 Servings (1/2 cup each)

Ingredients

  • 5 egg yolks

  • 3 tsp vanilla extract

  • 2 tbsp-equivalents white sugar substitute

  • 1/4 cup water

  • 1/2 cup frozen blueberries, drained well

  • 2 cups heavy cream, whipped

Preparation Method

1. Place yolks, vanilla extract, sugar substitute, and water in blender.  Blend at medium speed for 30 seconds.  Add blueberries.  Blend for 10 more seconds.

2. Fold yolk mixture into whipped cream.  Blend lightly until you have marbled effect.  Pour into freezer container.  Freeze.
