Stuffed Mushrooms : 4 Servings

Ingredients

  • 8 medium-sized fresh mushrooms

  • 1 tbsp butter (or low-fat substitute)

  • 2 oz cream cheese (or low-fat substitute)

  • 1/2 tbsp heavy cream (or milk)

  • 1/2 tsp minced fresh chives

  • 1/2 tsp lemon juice

  • 1/4 tsp salt (or salt substitute)

  • Ground black pepper, to taste

  • Paprika

  • Parsley for garnish

Preparation Method

1. Preheat the oven to 350oF.  Remove the mushroom stems and discard them, wash the caps and dry them.  Put the butter in a shallow baking pan, and place in the oven to melt.

2. Combine the cream cheese, milk, chives, lemon juice, salt, and black pepper to taste.  Using a fork, mix until smooth.  Spoon a generous amount of the mixture into each inverted mushroom cap and sprinkle lightly with paprika.

3. Place the mushroom caps in a shallow baking dish coated with butter and return to the oven to bake for 10 to 15 minutes.  Place on a serving tray, garnish with parsley and provide toothpicks.
