Lemon Shrimp And Vegetables : 2 Servings

Ingredients

  • 8 to 10 large parboiled shrimp, shelled and deveined

  • 1 medium green pepper, cut into strips

  • 4 stalks celery, split and cut into 2-inch sections

  • 1/4 cup lemon juice

  • 1/4 cup water

  • 1 tbsp butter (or low-fat substitute)

  • Garlic salt, to taste

  • 1/2 cup freshly grated Parmesan cheese

Preparation Method

1. Place the shrimp and vegetables in a large bowl.  Mix the lemon juice and water and pour over the shrimp and vegetables.  Let soak for 1 hour.  Toss ingredients several times.

2. Drain the shrimp and vegetables (discard lemon water) and then saute them in the butter until just cooked (about 2 to 4 minutes).

3. Transfer the shrimp to a broiler pan and sprinkle with garlic salt and cheese.  Place under the broiler for 4 minutes.  Serve warm.
